Walk-thru Wednesday with See Canyon Fruit Ranch

Now as you may have noticed, I am a little biased because I was married at See Canyon Fruit Ranch, a gorgeous apple orchard and garden nestled on the central coast next to classic beach town Avila Beach. But today we are not ooohhin and awwwing over the wedding grounds (although its very easy to do- be sure to check out their link). Today we celebrate fall and most of all APPLES. See Canyon Fruit Ranch is known for their wide variety of apple selection, 29 different varieties to be exact! I also happen to have the opportunity to work at this prescious apple stand and offer samplings, so today I thought it would be fun to see how Mamma Suzy over at the ranch has zested up the stand this year and also let me tell you about what apples are best for what…

The stand is in a classic old barn, complete with apple branches made into hearts, classic red checkered table cloth, crates filled to the brim with apples and lets not forget the classic fridge filled with yummy cider!

Here are some delish apple recipes Mamma Suzy suggests:

Apple Streusel Tea Loaf

2 cups flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup sugar (plus 2 tbsp for the topping)
1/2 cup butter
2 cups chopped, peeled apples (Missouri Pippin or Braeburn would taste great)
1/2 tsp lemon zest
1/2 cup milk
1 egg
1/2 tsp ground cinnamon

Preheat oven to 350. In a large bowl, stir together the flour, baking powder, salt and 1/2 cup sugar. Cut in the butter until course crumbs form. Reserve 1/2 cup of this mixture. Stir the apples and lemon zest into the remaining flour-butter mixture.

In a small bowl, mix the milk and egg until well-blended. Add to the apple mixture and stir just until moistened. Pour batter into a greased 9x5x3 inch loaf pan. In a small bowl, stire the reserved flour-butter mixture, cinnamon, and the remaining 2 tbsp sugar together. Sprinkle over batter. PRess down lightly. Bake 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before slicing and serving. Makes 1 loaf.

Autumn Apple Coffee Cake

1 egg
1/3 cup sugar
1 cup flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup milk
1 cup quick oats
1/2 cup melted shortening (we like to use butter!)
2 peeled, sliced apples (Braeburn would be awesome for this!)
1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tbsp butter

Beat egg and 1/3 cup sugar together until creamy. Sift together flour, baking powder and salt. Add alternately with milk to egg mixture. Stir in oatmeal and melted shortening (or butter). Spread half the batter in a greased 9″ round baking pan. Arrange apple slices over batter. Spread remaining batter over apple slices.

Combine 1/4 cup sugar, cinnamon and nutmeg. Cut in butter until mixture is crumbly. Bake in 375 oven 30 minutes or until done. Makes 8 servings.
