Trader Joe’s Smashed English Pea Toast with Greek Yogurt, Basil & Mint
A day started right is my jam. I don’t have a ton of control over all the problems and activities that may get thrown my way as the day proceeds, but my morning is mine. I wake up before the hubby and kiddos rise, the house is quiet and peaceful. I love that I don’t have to chit-chat or dive into a ton of problem solving first thing in the morning….I guess that is why I am an early riser. I need a little “me” time before everything starts getting into gear. Don’t get me wrong, I start my day with multi tasking (like making my kids lunch while I am making my breakfast), but having that alone time when I first get up feels amazing. Things get even more awesome if I manage to make a healthy, balanced breakfast for myself. My favorite is anytime that I can manage to squeeze in a solid helping of veggies at the start of the day. Don’t get me wrong, I love things like french toast…but gimme somethin’ green and I feel like I am ready to conquer the day with good decisions! LOL So, here is another one of my Trader Joe’s inspired recipes that I have created to make my start time feel awesome.
This simple English pea toast starts with pouring in the peas for a quick 90 second bath in boiling water. Use this time to get your favorite bread out for toasting. I LOVE Trader Joe’s sprouted bread. It has wonderful texture and makes me happy about another good nutrition decision for myself 😉
I adore the flavor of peas with fresh herbs. So, I smashed my peas with Greek yogurt, fresh basil & mint, a little lemon juice, garlic and sea salt. It was amazing! Especially when served up with a soft boiled egg!
If soft boiled eggs aren’t your thing, go ahead and layer on some hardboiled for an equally yummy treat!
Ahhh, this is the perfect start to a fabulous day! Do you go green for breakfast too? Haha I think it may be my secret weapon for not turning into the hulk during the day.
- 1 bag English peas
- 1/2 cup Greek yogurt
- 3 tbsp fresh mint chopped
- 3 tbsp fresh basil chopped
- 2 cloves garlic minced
- 1 lemon tested
- 1/2 lemon juiced
- 1 tsp sea salt
- 8 slices sprouted wheat toast
- pepper to taste
Dump the English peas in boiling water and boil for 90 seconds.
Combine all the ingredients and smash away: peas, the Greek yogurt, 2 tbsp of basil and mint each, the lemon zest and juice, the salt and pepper.
Toast the bread slices
Pile the smashed pea mixture on the toast and garnish with the remaining tbsp each of mint and basil. Serve with soft-boiled or hard-boiled eggs.
