Trader Joe’s inspired Smoked Olive Oil Brown Rice
Often times Chanda and I come home from a long day of preparation for our weddings of cooking to feed 200+ people and quite frankly the last thing we want to do is cook dinner for a little families. Let’s face it though, eating out shouldn’t be an option every night nor would it be good for our waist line or pocketbook. We always get excited to share when we come up with easy dinners that are equally yummy and fast. I came up with this creation the other night and it’s conveniently items mainly from Trader Joe’s. This is not paid or sponsored by Trader Joe’s, we honestly just ove shopping there because they have some pretty creative ingredients that always inspire us and our meals. Like this smoked extra-virgin olive oil for example- the perfect zest to any meal. You may have caught this recipe on our Facebook live last week, but here is the exact recipe. Carmelize your shallots in regular olive oil and then fry up your brown rice once your shallots are done. Just enough to heat the rice and a little crisp!

Easy and fast, this rice is the perfect side to pair for your next dinner! Smokey rice and sweet shallots, this will become a regular around your dinner table.
- 2 bags Trader Joes frozen brown rice
- 3 tbsp Trader Joes smokey olive oil
- 1 whole shallot sliced up
- 2 tbsp regular olive oil or coconut oil
- salt and pepper to taste
Carmelize your shallots in regular olive oil and then fry up your brown rice in the same pan once your shallots are done. Cook rice just enough to heat the rice and a little crisp! Next add smokey olive oil and stir. Add salt and pepper to taste. You can always add more smokey olive oil for a more dramatic taste.
