I naturally gravitate towards eating a pescatarian diet full of veggies, legumes and fruits. It isn’t because of a fad or any philosophical approach to eating, but it is quite simply what makes my body the happiest. I find that I feel nourished and energized without feeling the sluggishness that comes from my body struggling to digest foods. But this is real life, and I often want healthy that is also fast. That is probably why loaded toast has become so popular for breakfast, lunch or just hardy snacking. The quintessential avocado toast is an amazing stand-in for plant-based protein, heart healthy oils and loads of fiber. Avocado toast gets three cheers from me, but I cannot eat it everyday. I crave variety! So, I created another little Trader Joe’s inspired recipe that satisfies my hankering for both toast AND variety. Have you ever had sunflower seed butter? If not, you are in for a real treat!
This snack or light meal whips up crazy fast. You obviously can use any bread of your liking, but I particularly love the dense texture and slightly sour taste of Trader Joe’s European Style Whole Grain Bread. It is thin, chewy and perfect for this toast!
After toasting your bread slices, spread each piece with a tablespoon of sunflower seed butter. This butter is packed with protein and has the smoothest texture with a hint of sweet. Eegads it’s good!
Next up, the fresh mango. Cutting a mango is actually fun, if you take the porcupine route. Look at your mango, find which side is the narrow side and slice it all the way down starting just a bit off-center. This way you miss the pit. Then dice it in it’s skin much like you do an avocado, but then flip the skin inside out. Porcupine! Now, just cut the cubes free of the skin.
Last up is to top it with Trader Joe’s unsweetened Coconut Chips. The crunch is amazing! A tropical delight…and a great way to start the day (or rev up my energy when I seem to be struggling at 3pm….what is that? It’s like the whole world needs a nap, right?)

A quick and easy vegan recipe to start your morning or afternoon with a punch of protein and great fiber. Light, delicious and fast nutrition.
- 2 slices sprouted wheat or multigrain toast
- 2 tbsp sunflower seed butter
- 1/2 cup coconut chips
- 1/2 mango chopped
Toast your bread slices.
Cut the mango away from the pit down the center along the skinny side. Carefully slice the flesh into cubes and flip the skin inside out to cut the cubes away from the skin.
Spread your toast with the sunflower seed butter, top with the fresh mango and coconut chips. Cheers to healthy eats!
