Strawberry Basil Goat Cheese Panini with Balsamic Glaze
I was actually home for lunch for once!! Wahoooo- usually I am out and about meeting clients or running errands and don’t eat or have some simple snacks. But not yesterday- oh no- yesterday lunch was LEGIT. Even if I was home alone, I was bound to use a bunch of the food items I have that are going to quickly spoil- what does that mean? Strawberry Basil Goat Cheese Panini- duhhh? 🙂
- Marble Rye Bread (that’s what I used, really anything would be tasty!) and a little butter
- Goat Cheese
- Balsamic Glaze
Chop up your basil and mix in with goat cheese, then set aside. Next butter both outer sides of the bread, and on the opposite side spread goat cheese mixture. Slice up your strawberries and lay across, then pop the sandwich onto a hot greased griddle or panini maker. Cook for about 5 minutes or until brown is golden and sandwich is warmed through. Then drizzle with balsamic glaze!
