Smorgasbord or Open Faced Sandwiches
I call this “everything-but-the-kitchen-sink” type eating. However, it’s technically called smorgasbord, and it is quite honestly my favorite way to eat! In restaurants, I am a chronic splitter. I spend forever perusing menus and finally fail on narrowing down to just one selection…opting to coax whomever I am dining with into splitting a couple choices with me. Hahaha, I get bored too easily! I want to try a little of this, and a little of that. So, at home, I love smorgasbord. It’s my ancestral answer to a happy palate. In Swedish, smorgas means “open-faced sandwiches” and bord means “table.” This style of eating is dearly cherished by my family, young and old. Imagine a table set with all sorts of creative concoctions on dark bread, showcasing fresh ingredients and yummy spreads. Yep this is a delicious way to eat, and I figured that giving you a couple of ideas for creating your own smorgasbord the day before the Super Bowl might be a good idea 😉
When I say “everything-but-the-kitchen-sink,” I mean it. Open up the pantry and fridge and get inspired! You want to focus on fresh ingredients, favorite cheeses, meats, and flavor combos.
I made five different options to get your creative juices flowing!
1| Brie cheese topped with warm sauteed apples, mushrooms, almonds and fresh thyme in brown butter
2| Fresh butter topped with butter lettuce, heirloom radishes sprinkled with sea salt & cracked pepper
3| Dilled havarti cheese topped with fresh pears
4| Duck pate topped with caramelized onions and pan-fried berries
5| Green goddess dressing with butter lettuce, bay shrimp and fresh dill sprigs
The flavors were all so different fun! Other ideas could be:
roast beef with horseradish cream and arugula
smoked salmon with honey mustard, dill and capers
hummus with slices of roasted bell peppers and mint
Holy cow, I could go on forever. The point is have fun! Be creative and play with flavors. Everyone at your table (or coffee table in front of the game lol) will be delighted by so many flavor options. It’s fun, colorful and super satisfying.
