Ok, y’all. If you have checked in with Zest it Up throughout this past year, I have a feeling our thrifty, DIY spirits have been pretty front n’ center. With that said, this past week has been crazy busy. Yes, we had the usual activity of client meetings, catered weddings, design schematics, intermingled with kids, puppies, and life. But, this past week we decided to start a face-lift for Zestitup.com. And, in true Zest it Up spirit, we have been designing and problem-shooting our site in DIY fashion. A work in progress? Yes, absolutely (hold the critiques for a tad, pretty please). Fun brainteasers that make us loose track of time? Absolutely without a doubt….hello 1AM computer sessions! So, next question? How do Sam and I keep our sanity and pull it off? Often times surviving a hyper, multi-tasking week for me means quick decisions for some of the basics of my day. The obvious task is dinner.
I could be the super planner who pops a roast and potatoes in the crock pot at the beginning of the day but……. A) There never seems to be the time B) I couldn’t eat roasts even once a week and C) I just ain’t that good of a planner. So, my solution is QUICK! With some simple ingredients, the right timing and a little know-how….dinner is possible within 30 minutes. Thank goodness!! ‘Cuz by 6pm I’m starving 🙂
First things first, give your veggies for your side dish a wash. I chose some beautiful pencil-thin asparagus, yum. Heat up a large skillet over a medium heat and melt 1 tablespoon of butter.
Saute the butter and get your shrimp ready…. Dump in a 2lb bag of frozen shrimp and then get your second pan ready for your side veggies.
Now for the miso…
Now for the green scallions…..or in less pretentious terms: green onions.
Right about now, your rice cooker should be going DING. Oh boy, the smells…so exciting, a yummy dinner ready to be plated.
Ding, ding, ding, supper’s on! The smells had even the kiddo’s salivating and speeding through setting the table. Seriously. My toe-heads are convincing me to open a restaurant with this one on the menu. Man, I hope you try it out. Fast and delicious.
This quick dinner recipe is not only tasty but super easy to make! You can never go wrong with seafood!
- 1 tbsp butter
- 2 lb frozen shrimp
- 1 tbsp soybean paste (aka miso)
- green scallions
- splash white wine
Give the veggies for your side dish a wash. Put some rice in a rice cooker (or cook it whatever way your prefer).
Heat up a large skillet over a medium heat and melt 1 tablespoon of butter.
Saute the butter and get your shrimp ready.... Dump in a 2lb bag of frozen shrimp and then get your second pan ready for your side veggies.
Start cooking your asparagus in a separate pan.
Add a heaping tablespoon of miso to the shrimp pan. Once the shrimp goes from grey to pink, it's cooked all the way!
Add the chopped green onions to the shrimp pan with a splash of white wine. Continue to cook on medium heat and stir all the ingredients together in the shrimp pan for the most flavor!
Right about now the rice should be done. Add your shrimp on top a pile of rice. Top off with the asparagus and enjoy your yummy dinner!
