Savouring Saturday: Spicy Watermelon Basil Margaritas

I think most of you know why we call ourselves “Zest it Up”….we love to zest things up.  Turn the less-than-desirable into something fresh and exhilarating!

Case in point:

We recently found ourselves with a hefty amount of leftover cubed watermelon.  Now that it is the day after your 4th of July festivities, you may wanna listen up to this solution.  Our first reaction was to throw it in the freezer…and think about it later.  I must say, that was a BRILLIANT move!  “Why brilliant?” you may ask.  Simple, yesterday we found ourselves cooking up a storm in our commissary.  Imagine…the outdoors temp was in the nineties, we had no air conditioner, we had 9 large chaffing dishes of boeuf bourguignon baking away in two ovens, and we had the stove tops cranking away.  Wowzers!  Major heat.

Solution:

Time to grab that frozen watermelon and ZEST it UP!

Oh happy day!

Fill your blender with frozen watermelon, then top off with:

* 8 oz tequila

* 8 oz margarita mix (we love Costco’s variety which is very limey)

* a few slices of jalapenos

* a small bunch of basil

Such a zesty way to cool down!  I am so loving that we have got frozen watermelon in our freezer this week!
