Savouring Saturday: Poppy Seed Chicken Casserole
This is a classic savoring saturday that my momma would make for dinner sometimes. I made this for some friends that came over for dinner the other night, such an easy dinner that is filling and fast! score! I love the golden brown top it gets with the black poppy seed encrusted on top, MMMmmmm 🙂
- 6 chicken breast halves cooked and cut into strips
- 2 cans condensed cream of chicken soup
- 1/4 cup water
- 1 cup sour cream
- 8 oz monterey jack cheese
- 3 tablespoons poppy seeds
- 2 packages ritz crackers crushed
- 1 1/2 stick melted butter
- 1 bag broccoli
Preheat oven to 350 degrees. Arrange cooked chicken strips and broccoli into bottom of 9 by 13 pan. Season with salt and pepper. Stir together soup and water in a sauce pan over medium heat to remove lumps. Remove from heat and add sour cream. Stir in cheese and 1 1/2 poppy seeds and pour mixture over chicken. In a separate bowl mix together remaining poppy seeds, cracker crumbs and melted butter. Sprinkle over chicken and broccoli mixture and bake in preheated oven for 30 minutes. Enjoy!

Don’t forget those poppy seeds!!
Get all your aggression out and crush those ritz crackers!!
Toss your crackers in the butter and poppy seeds.
