Sometimes, the only thing that hits the spot is a classic! If you are looking for something to do with left over chicken or a scrumptious rotisserie chicken, look no further. It’s crazy simple. Just pile up your shredded chicken in a medium sized bowl. It can be cold or warm…just not hot (unless you are totally into the messiness of hot mayo!)
Add a 1/2 cup of raisins to your chicken.
Now, add in a 1/4 – 1/2 cup of mayo (depends how creamy you like your sandwich).
Then add in a teaspoon of curry powder.
Finally, my secret ingredient….a tablespoon of some nice and spicy French Dijon mustard.
Last step, add 1/2 a diced onion. Oh, and don’t forget some cracked pepper and a good dose of salt (remember: chicken LOVES salt). Stir away!
I decided to make my tummy happy, so I piled my curried chicken salad high on some romaine spears and some gluten free bread. However, this would make a killer salad, piled up on some crunchy greens and topped with a drizzle of your favorite crisp vinaigrette!
This salad is so scrumptious! My pre-teen devoured about three open-faced sandwiches in one sitting (ummmm, can you say “hollow leg”?)
