Savouring Saturday: Grapefruit Brulee with Vanilla Bean Greek Yogurt and Almonds

I freakishly love burnt sugar.  I cannot resist the solid THWACK of my spoon busting through the crunchy exterior and the deeply caramelized warmth of sweetness that makes me do the happy dance.  Obviously, the decadently creamy richness of a creme brulee is to die for….but sometimes a girl has got to get her sweet on in a slightly more tame approach.  Thanks to the unassuming grapefruit, coupled with the lush texture of Greek yogurt….my cravings are easily satisfied.  Oh, and my caloric intake doesn’t shoot through the roof!

I hope this peeked your curiosity.  Undivided attention?  Good….cuz this is going to rock your world!  These little gems will have you showboating at brunch or dessert like a rockstar chef.  So, get busy cookin’ and enjoy the accolades, then close your eyes and enjoy the flavor punches…and maybe wash the whole experience down with a sip of Prosecco.  Gorgeous!!

  • 2 grapefruits
  • brown sugar for sprinkling
  • 1 container of plain Greek yogurt
  • 1/2 a vanilla bean
  • 1/4 cup of almonds, chopped

I like to go the extra measure and cut the grapefruit into segments, so that it is easier to gobble up.  Trust, me, you will want to take the time here so that you won’t waste energy struggling when it comes time to eat.  You will thank me when you don’t waste any of the juice.

OLYMPUS DIGITAL CAMERABefore you are ready to “brulee” your grapefruit, get your vanilla bean out.  Slice it lengthwise to open up the bean, and then run the back of your blade down the center to collect up all the luscious little black seeds.

OLYMPUS DIGITAL CAMERACareful not to loose any of them!  They are black gold….tiny but bold in flavor.  Go ahead and simply mix them into your Greek yogurt.  No need for any other ingredients.  Trust me, the quality and simplicity is perfection.

Onto the “brulee”….sprinkle the tops of the grapefruit with brown sugar.

OLYMPUS DIGITAL CAMERAIf you have a gas broiler, you can plop the grapefruit on a cookie sheet and place them on the top rack.  However, the process is insanely quicker and a tad more dramatic when you bring out a torch!  Ours we just picked up at Ace Miner’s for little to nothing.  If you haven’t added a torch to your kitchen tool kit, you might want to consider this new toy.  Its super fun!
