Savouring Saturday: Gluten Free Angel Food Cake
We were having our usual little monday night dinner crew with some friends and they always seem to be my little guinea pigs! ha! Yep- I seem to always want to try out new recipes on them and especially experiment more with gluten free recipes so one of my girlfriends can eat with a happy and content belly. So with that they usually have to bear with me experimenting or taking pictures while cooking, but I think we can all agree this recipe was worth the wait! This was my first stab at making a gluten free angel food cake- WOW. SOOOO yum and fresh, you have got to try it!
Makes 10 to 12 servings, need a tube pan
- 1 3/4 cups sugar
- 1/4 teaspoon salt
- 1 cup sifted gluten free flour
- 12 egg whites
- 1/3 cup warm water
- 1 teaspoon almond extract
- 1 1/2 teaspoon cream of tartar
First preheat your oven to 350 degrees F. Then you want to make your sugar super fine so throw it in a ninja or food processor for a few minutes. Now sift half of the sugar with the flour and salt and set the remaining sugar aside. In a large bowl whisk together egg whites, water, extract, and cream of tartar. After a few minutes of mixing with your hands switch to an electric mixer and slowly sift the remaining sugar in at medium speed. Keep up the mixer until you achieve medium sized peaks, then slowly add the flour mixture folding gently. Fold until the mixture is all incorporated. Next spoon the mix into an ungreased tube pan and bake for 35 mins. Check if it’s done by placing toothpick in and look for it to come out clean. Cool upside down on rack for at least 30 to 40 mins before removing from pan. Best to enjoy with fruit and whipped cream but you already knew that!
