Savouring Saturday: Fried Mozzarella Caprese

MMMMMmmmmm I am still “savoring” this tasty side dish Chanda and I made for lunch yesterday. We were both browsing Pinterest earlier this week and were inspired by some panko fried mozzarella- sounds tasty right? But helllloooo- we have to zest it! We had to make this dish our own and add some zest, so that we did! Instead of the predictable panko breading we went for some almond meal- this was a great way to add some protein to our meal and also stay gluten free for miss chanda panda 🙂


  • 1/4 cup almond meal
  • 1/3 cup parmesan cheese
  • salt n pepper
  • 1 egg
  • 4 mozzarella cheese slices
  • 8 basil leaves
  • 8 tomato slices
  • balsamic glaze


Start by heating oil in your pan, in the meantime mix together parmesan, almond meal and salt n pepper. Next crack and scramble your egg. Take each slice of mozzarella and douse in egg, then douse in parmesan mixture. Now time to head over to your heated skillet, cook each slice on until golden brown on each side and flip like a pancake. Now it’s time to stack- start with a basil, then mozzarella, then tomato and repeat.Finish with a balsamic glaze drizzle (you can make your own or I used Trader Joe’s). Enjoy!
