Raw Shaved Asparagus Salad with Pine Nuts & Parmesan
This veggie side dish is a legit harbinger of spring! I get so darn excited this time of year. The colors at the Farmer’s Markets are starting to pop and all the beautiful flavors of warmer weather are starting to emerge. Don’t get me wrong, I love the blooming wildflowers just as much as the next gal, but I get WAAYYYY more excited about the blooms on my strawberry plants, lemon tree, and tomatoes. I am totally one of those nerds who checks on the changes of her garden every morning, and I am loving what I see!
When I think spring, I almost always think asparagus. These sweet and green tasting spears are starting to thrust their proud necks up out of the dirt and are begging to be thrown into risottos and primaveras galore. There are so many ways to eat them, but sometimes I like to keep it clean and veggie forward. This raw shaved asparagus salad is exactly that! With the help of a basic veggie peeler, this side dish whips up pretty darn fast and is loaded with good for your enzymes and vitamins! Gotta love it when your tastebuds and your body are doing the happy dance!
The ingredients are simple…which in my book, tends to be the earmark of a great dish! The only “fancy” aspect of this salad is shaving the asparagus, which is done quit simply with a basic kitchen veggie peeler.
This is basically a “toss everything into one bowl” type of recipe. To dress this salad, I simply use freshly squeezed lemon juice and an excellent quality olive oil, like this locally harvested Olea Farm Olive Oil. Trust me, good olive oil makes a difference with a dish this simple. You want that slight bite of piquancy at the back of your throat. YUM!
I use tongs for dish out, but I highly recommend getting your hands dirty when tossing this salad. Using your hands will help in not breaking up the delicate shavings of asparagus before serving.
