Purple Spinach!

Savoring Saturday:

The other day, while Sam and I were picking up a few ingredients at Trader Joe’s for a client tasting, we found something special.  Purple spinach!  Have you ever?!?

It was so gorgeous, that we simply had to snag some for an unknown use!  I adore heirloom varieties of all veggies, but this one literally had my eyes dazzled.  So, we loaded it up into the cart with every confidence that we would figure out some sort of dish that would highlight it’s beautiful jewel tones for Savouring Saturday.

Obviously, throwing this gorgeous veggie into a salad would be a home-run.  I knew that I would want to create a dish where it would stay in it’s pretty raw state, but a salad just was not quite hardy enough for me today.  Since I have been busy on Pinterest, pinning Scandinavian Christmas decor (getting ready for the holidays), I started craving some Scandinavian flavors.  So, here is a little Scandinavian inspired wrap that I threw together for a little get together this afternoon.  Loaded with bay shrimp, this one will satisfy some major seafood cravings!

Shrimp Salad Wrap with Purple Spinach

  • 1 lbs of bay shrimp
  • 3 celery sticks, chopped small
  • 1/4 c of chopped, fresh dill
  • 1/4 c mayonaise
  • 2 tbls dijon mustard
  • 1 tsp pepper
  • 1/8 tsp salt (or more to taste)
  • purple spinach
  • 1 avocado, sliced
  • whole wheat wraps (or I use rice tortillas, to keep it gluten free and tummy-happy)

Simply throw together the shrimp, celery, dill, mayo, dijon, pepper and salt, and give it a good stir.  Then layer a tortilla with the spinach, shrimp salad and the avocado slices.  Roll all the happy goodness up, and slice it in half to serve.  YUM

Super quick!  Super fresh! Super delicious!

This would also work perfectly as a traditional Scandinavian open-faced sandwich.

On a chilly day like today, I am ready to pair my wrap with a pureed corn and chili soup that I get from Trader Joe’s as well.  Heavenly!
