Potato Kale Soup

Last week we actually had some rain, more than a drizzle- whoop whoop! Of course as I write this post I sit in a tank top with the sun flooding through my windows, but just for a minute let’s pretend like it is fall and make some delicious homemade potato kale soup!! YUM! My mom used to always make this for us and what was funny is that my dad hates hot liquid. Yep- coffee, tea, soup, cider- you name it. It’s a hot liquid. So it was always a treat when we would have soup for dinner- which is pretty funny since soup is so easy and yummy! Now time to cozy up with a bowl….

Heat oil and butter in heavy soup pot. Add leeks and onion and cook until translucent. Add potatoes, thyme, broth and kale. Simmer for 15 mins or until potatoes are cooked and tender. Add milk and cream. Season to taste with salt and pepper. Heat slowly to a simmer and whisk in 1/4 lb shredded cheese that has been tossed in cornstarch. Let cheese melt and serve.

Now to toss the cheese with cornstarch to help with thickening…

And might I add that this soup is AMAZING with homemade beer bread- yummmm!!

Potato Kale Soup

Cozy up with this warm bowl of potato kale soup with your loved ones! Pairs great with some homemade beer bread!

Course: Dinner, Lunch, Snack, Soup
Servings: 6 people
Ingredients
  • 1 tbsp oil
  • 1 tbsp butter
  • 3 leeks, chopped
  • 1 bunch kale, chopped
  • 1 onion, finely chopped
  • 1 1/2 lbs red potatoes, peeled and diced
  • 1 pinch thyme
  • 4 cups chicken or vegetable broth
  • 1 cup half and half
  • 1 cup milk
  • salt and pepper to taste
  • 1/4 lb shredded cheddar cheese
  • 1 tbsp cornstarch
Instructions
  1. Heat oil and butter in heavy soup pot. Add leeks and onion and cook until translucent.
