No bake gluten free chocolate rolled oats cookies

Howdy Zesters!

How are you holding up under the heat? Or are you even experiencing it? haha Well I am certainly enjoying my sun tea and nice summer nights, but during the day up here in Atascadero I feel like melting away! These cookies are a great sweet fix but the best part is you don’t have to use your oven (aka don’t heat up the house even more!!!). This recipe just keeps getting better because it is also easy and gluten free!! Wahoooo (and did I mention zero calories? ha you wish) Onto the cookies….

Ingredients

  • 1/4 lb butter
  • 3 Tablespoons Coco Powder
  • 1 teaspoon vanilla
  • 2 cups rolled oats
  • 1/3 cup sugar
  • 1/4 cup milk
  • 2 cups peanut butter

Directions: 

In a saucepan, combine butter, sugar, coco powder and milk and stir until boils. Once you see bubbles, add vanilla, peanut butter and rolled oats and mix together. Then remove from heat and use a spoon or small ice cream scoop to place 2″ balls onto wax paper. let set out for 2 to 3 hours and they will harden, then time to serve up! Great served room temperature or chilled 🙂
