MMMMmmmonday: Pistachio Pesto

Well I hope you all have had a wonderful St. Patrick’s day filled with lots of green and no pinching!! Maybe you tried Chanda’s spicy concotion or my sweet Bailey’s Chocolate cake? Now ready for the main course? I wanted to make something that would make you go MMMMmmmmMMM but also was festive for the holiday, so what does that better than pesto? (yep the Italian is coming out in me on an Irish day- ooops!) But what I love about this recipe is that not only is it easy and super versatile, but it’s awesome for those of you with cashew allergies like my dear friend Katie! Now they too can experience pesto in all it’s glory 🙂



  • 1 1/2 cup fresh basil
  • 1/2 cup cilantro
  • 2 to 3 garlic cloves
  • 1/4 cup grated parmesan cheese
  • 1/4 cup olive oil or a basil or pistachio oil
  • 1 teaspoon lemon zest
  • 1 cup dry roasted pistachio nut


Literally throw all the ingredients into a ninja or food processor and blend away until you have a nice pureed smooth mixture. You can always add more olive oil if it seems “dry.” Now the possibilities are endless combos!

  • and pretty sure the list could go on….
