In preparation for St. Patricks day- aka all things GREEN, here is a fun recipe that will start (or end) your day with a tasty green treat. These matcha green tea donuts are originally from Cooking LSL and wowzers are they yummy! What I love about these donuts are the fact that matcha is packed with antioxidants AND natural caffeine- two for one!? Plus did you know why matcha is green? Here is some green trivia of the day…during the last couple weeks before tea leaves are harvested to be made into matcha, they are covered to deprive them of sunlight. This causes a tremendous increase in chlorophyll production in the new growth of these plants. The resulting high levels of chlorophyll in matcha green tea are where they get their gorgeous color! Okay enough talk, time to make some donuts!!
Ingredients:
For the donuts:
- 1 1/4 cups all purpose flour
- 1/2 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp matcha (I added a little more than Mira so it would be EXTRA matcha flavor/color)
- 2/3 cup melted coconut oil
- 1/2 cup lukewarm milk
- 1 large egg at room temperature, whisked
- 1/2 tsp white vinegar
- 1 tsp vanilla extract
For the glaze:
- 1 1/2 cups powdered sugar, sifted
- 1/2 tsp matcha
- 2-3 tbsp hot water
