Whoa!!! What the heck? I do not know about you, but all that dang holiday feasting has me starting off my New Year’s resolution with a bit of a set back. I am so ready to clean up my holiday grazing habits!
With the New Year, some of you may be looking to switch up your eating habits, as well. This may mean shying away from gluten, dairy, meat, sugar, or whatever else appears to be a nemesis to your digestive system. Good news is that you do not need to forsake flavor or slave away in the kitchen. This meal is jammed with flavor and requires very little effort. A double win in my book!Loaded BBQ Chicken Stuffed Sweet Potatoes
4 baked sweet potatoes
3 chicken breasts, shredded
your fav BBQ sauce
1 bunch cilantro, chopped
1/2 onion, chopped
1/2 cup cheddar cheese, shredded (optional)
4 scallions, chopped
1 jalapeno, minced
1 avocado, diced
1/2 cup Greek yogurt, for topping
Honestly, this dish is such a cinch to prepare that it is hard to even call it a recipe. It is more like a list of toppings that make for a fantastic midweek dinner.
While you bake the sweet potatoes in a 400*F oven for 45-60 minutes, you can cook the chicken and prepare all your toppings. When it comes to the chicken, feel free to cook it in a crock pot starting in the morning, or whip the breasts up fast in a skillet or on a BBQ. Whatever way is your favorite…go for it!! In the end, you will just shred it and douse it with your favorite BBQ sauce. This really doesn’t require a lot of finesse in the kitchen. Hahaha! But it tastes great!!!
(Side note: the sweet potatoes and chicken can be prepped earlier and then reheated for an even faster midweek meal)Once the sweet potatoes are soft and creamy, it is time to dig in!Top them with the BBQ chicken and a dollop of Greek yogurt for the tang.Have fun piling on whatever floats your boat! Then, get ready to dig in!!! These little packages have a huge flavor punch.Dang, these are good! It is such an easy way to have a tasty gluten free dinner that is full of color and nutrients. Even the kids love these…I think they feel like little chefs when they get to create their own flavor combos.
