Lavender Blueberry Milkshake

Happy Saturday! With my seemingly abrupt entrance into the working world I learned a valuable lesson about the very thing I had set out to do: work. Gone were the days of staying up late to be productive then sleeping in a little, the days of having a two hour break to run when the sun was actually shining, of hours spent in my favorite coffee shops doing schoolwork, and of entire days where I could organize my own schedule to get my to-do list done. What is the bottom line here, what valuable lesson did I learn? Yes, I learned the value of the weekend.

The weekend stands at the end of your busy work week to promise you the freedom of….more work. Finally you have time to do everything you didn’t during the week! Let’s talk about laundry, vacuuming, cooking, cleaning the fish bowl and so much more. There is always more work to be done, more chores to add to the growing list.

I challenge you to take a minute out of that crazy day and sit for a minute with a friend or your family and enjoy the sunshine. I promise you will be happy you did.

Drink this while you enjoy the sunshine! Or, if you prefer, you can take a short break and enjoy it while you work on the car…lavender isn’t only for girls.

INGREDIENTS

SERVES 4

  • 6 scoops of vanilla ice cream (using French Vanilla, like I did, causes some separation after about 15 minutes due to the custard base. I recommend using plain vanilla or vanilla bean)
  • 2 cups fresh blueberries
  • ¼ of a vanilla bean
  • ½ tsp dried lavender
  • ½ cup milk

PREPARATION

Scoop the ice cream into the bowl of a blender.

Scrape the insides of the vanilla bean into the blender.

Add everything else and blend for about 45 seconds or until the drink is thick and looks pretty blue.

Drink up!
