Homemade Cashew Cheese

One of my favorite hang out times with girlfriends is to pour a glass of vino, turn on some sweet tunes and then cook together. Rather than go out to dinner and deal with parking and a bill- why not stay cozy at home and cook together? Plus it usually adds up to late night hours of chatting and maybe watching a chic flick. Okay enough of my “womance”  – anyways, when I was cooking with a friend the other night we made cashew cheese and I was hooked!! You all know Chanda and I love our cheese, but let’s face it the cheese also loves our waistline. So here is a yummy healthier and vegan option….


  • 1 cup raw cashews (soaked for 1 hr or more)
  • 3 garlic cloves roasted
  • 1/4 cup nutritional yeast
  • salt to taste
  • 3 tbs lemon juice
  • Add water if needed for consistency

Simply add all ingredients into your food processor and blend until thick and creamy. Store in the refrigerator for up to 5-7 days. Enjoy!
