Hello everyone! Recently, I have been struggling with sweet cravings post exercise … After a few intense workouts, I have been craving something a little sweet. So I finally found this great cookie recipe (that can also double as granola) out of Chloe’s Kitchen vegan cook book and made some personal tweaks!
– 1 1/2 cups of all purpose flour
– 1 teaspoon ground cinnamon
– 1/2 teaspoon of salt
– 3/4 cup od canola oil
– 1/2 cup agave syrup
– 1 tablespoon pure vanilla extract
– 1 1/2 cups rolled oats
– 1/2 cup sweetened shredded coconut
– 1/2 cups semisweet chocolate chips
Pre-heat the oven to 350 degrees, mix flour, cinnamon, and salt in a bowl. In a separate bowl whisk oil, agave and vanilla. Then add wet mixture to dry, after combined, slowly add in the oats, coconut and chocolate chips. Then place on a cookie sheet and bake for about 14-15 minutes!
Super easy! What I love most about this recipe is that the come out of the oven crispy and golden! They are not your typical gooey cookie, but thats kind of the beauty of it! And it also tastes AMAZING crumbled into some yogurt with blueberries for a healthy, sweet treat!
