Easy Chicken Mole
I adore the deep complicated flavors of a good mole sauce. Perhaps it’s the earthy flavor of chocolate or it’s the respect I have for a sauce that requires 20+ ingredients to simmer away into perfection. Regardless, I think it is the perfect way to bring the aphrodisiac of chocolate to the table this Valentine’s Day! Haha, however, Valentine’s is on a Wednesday, so I will probably be making my “cheat” midweek mole sauce this time around. I don’t call it lowered expectations, but a good helping of realism. I know that I will be juggling a few balls throughout the day, so having a recipe like this up my sleeve just helps me stay balanced.
This sauce is not as fabulous as the “real McCoy,” but it is a lovely emulation that whips up pretty darn easy in a pan or even a crockpot!
Start by simmering your chicken with some basic red enchilada sauce straight from a can. Yep, this is me telling you to use your can opening skills and dump a sauce straight into a pan…crazy, right? Now, add in some scallions, sesame seeds, and…drumroll please…cacao powder. The cacao will deepen the flavors almost instantly, while slightly thickening the sauce into a rich concoction. Once the chicken is cooked through, I like to give it a quick shred with a fork. If using a crockpot, the chicken will almost instantly pull apart into juicy morsels.
Despite the cacao, this is not a sweet dish. It is earthy, spicy and just plain old wonderful. I love that this “cheat” version is pretty much a “throw it together and forget about it” type of dish. I paired it with some simple oven roasted sweet potatoes to round out the meal. Holy cow is this good!
SO, if you forgot to make Valentine’s Day reservations to your favorite restaurant, or you were already wanting a quiet evening at home, you might want to give this dish a try. Heck, you might want to try it any old weekday night! You cannot beat the flavors and the ease with which it whips up. This is just a great addition to your regular meal planning for fast dinners. Made in a crockpot or a pan, this mock mole sauce is a wonderful midweek meal that pairs down the traditional 20+ ingredients to a single hand.
- 4 chicken breasts
- 1 can enchilada sauce
- 2 tbsp cacao powder
- 1 bunch chopped scallions, reserve some for garnish
- 2 tbsp sesame seeds, plus more for garnish
Add the chicken and enchilada sauce to a medium sized pan or a crockpot. Add the remaining ingredients and simmer until cooked through. If using a crockpot, set to low for 5+ hours.
Shred the chicken and garnish with the remaining scallions and sesame seeds.
