Cream Cheese Roasted Raspberry Chipotle Chicken

Ok so this chicken is something I just threw together on one of those nights where you look at your fridge and have to get creative. What did I find- not much-ha but here is what I was inspired by…this jar of roasted raspberry chipotle sauce (from Costco) that I normally put out as an appetizer with crackers and cream cheese- why not try this with chicken?? Well I did, and let me tell ya it’s delish and EASY. 

After sauteing those onions, I added them to the cream cheese to create this mess below…

Time to stuff those chicken breasts! Make a slit (like a pocket) and stuff away.

After pouring the sauce over and dicing up some more onions to top it off- its time to bake!

Yummmm, serve this with onion roasted potatoes and fresh garden salad- you feelin me?



  • 8 raw chicken breasts
  • 8 oz. cream cheese
  • 2 onions
  • 1 jar of Roasted Raspberry Chiptole Sauce (buy at Costco)

Easy right?? 🙂

Saute onions, combine onions and cream cheese, make pockets in chicken and stuff with cream cheese mixture, use toothpicks to keep shut, cover 9×13 bottom of pan with  raspberry sauce, next arrange stuffed chicken on pan, cover top of chicken with raspberry sauce, bake for 30 to 40 mins at 350 F. Make sure to check if chicken is fully cooked before serving. Add more sauce as you please. Enjoy!!
