I love my coconuts. Seriously, if a menu reads “coconut” somewhere on it there is a really good chance I am ordering that item. Coconut curry, coconut chips, coconut water, macarons, and coconut MaRgArItAs!!! HeyyyyYYY! I must say that I have seen more coconut things trending lately. So with that I am feeling a bit inspired today, meet my coconut margarita recipe….
Ingredients:
- 1 cup sweetened shredded coconut
- 1/2 teaspoon salt
- 3 shots tequila (4.5 oz)
- 1 can cream of coconut
- 1/2 cup simple syrup
- 1 cup coconut water
Directions:

Preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with the salt. Spread on sheet; toast in oven, stirring frequently, until golden brown, 8 to 10 minutes. Let cool, then crush with your hands until crumbly.

Place ice, coconut cream, coconut water, tequila, simple syrup in blender and puree until smooth

Dunk edges of glass in simple syrup and then roll edges in toasted coconut, pour in glass and enjoy!!
