When is the last time you nibbled on a date? Chances are, unless it was a bacon wrapped date stuffed with cheese- it may have been awhile since your body has had all the amazing benefits of dates!! As we are still fresh in the New Year and hopefully still on our health kicks- I am always looking for healthy and easy snacks on the go. Dates are the perfect answer! They are high in natural sugars like glucose, fructose, and sucrose. Therefore, they are the perfect snack for an immediate burst of energy and getting you back to tackle your day. I am going to show you how to make super easy date energy balls that are mixed with peanut butter (great to add some protein) and ginger/orange- which will only help boost that immunity!
First remove all your seeds from the dates and then add to your food processor or blender.
Next add your peanut butter, orange zest and fresh ginger.
Blend your ingredients to form a sticky paste. Then use a tablespoon or small ice cream scoop to scoop out your mixture. Wet your hands a bit and roll into a ball. Roll a few balls and place on parchment paper. Then roll your sticky date balls in your toasted coconut.
Place in fridge or freezer so they firm up! Enjoy these snacks chilled 🙂

These energy balls will give you that sweet craving but yet with all natural sugar and the perfect crunch with the coconut!
- 2 cups dates
- 2 tbsp peanut butter
- 1 tbsp fresh ginger
- 1 zested orange
- 2 cups toasted shredded coconut
First make sure your dates are all de-seeded and then put dates, peanut butter, orange zest and ginger in blender or food processor. This will create a sticky paste. Wet your fingers to help with less sickness, then use tablespoon scoop to form into ball and roll in toasted shredded coconut. Place in freezer or fridge to allow them to firm up and set. Then enjoy chilled!
