Cinnamon Sugar Pumpkin Seeds
You see those colors? we finally hit fall here, I love it! Trees look as if they are on fire, when I go outside I start to see my breath, and my scarf collection is starting to get some love again- now its just time to start incorporating some fall in my meals! This screams pumpkinnnnnsss- convenient for halloween next week- lets carve those suckers up!
- 1 1/2 cups pumpkin seeds
- 2 tablespoons melted butter (or olive oil)
- 2 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
After washing the seeds (it’s ok if there is a little pumpkin still on them, it will roast off when we bake) then coat seeds in butter or olive oil. Next comes all the other seasonings- time to get hands on- literally! Then pop in oven at 350 F for about 30 mins or until seeds are golden brown.
