Bird nest coconut cupcakes
So you might remember wayyyy back when I shared one of my favorite cupcake recipes with you- the hummingbird. Everyone always gives an odd face when I say the name but once I list the ingredients (bananas, pineapple & cinnamon) they quickly realize this cupcake is truly named after some nectar lovers. But honestly today’s post is less about the cupcake and all about the presentation. After all, we know we all eat with our eyes and who can resists a cupcake that is a nest? Since this week was the first official week of spring and the week before Easter it couldn’t be a better time to show off these fun spring treats. I used my hummingbird recipe with cream cheese frosting but honestly you can use any cupcake recipe as your base…
Ingredients:
Frosted Cupcakes
Toasted coconut
Robin Eggs (or jelly beans)
Simply start by frosting your cupcakes- this is where the kiddos are usually eager to jump in- amen?
Next toast your coconut in the oven until golden brown (350 F), I have a little toaster oven I love to use so I don’t have to heat up my big oven for such a simple task. Then take small handfuls (about a tablespoon or so) and pile them on the cupcakes. Lastly add a few eggs- voila!
