What does a caterer eat for lunch?

Today is a fantastic day of us puttering in the kitchen and getting things prepped for two separate tastings for two beautiful couples.  The smells are amazing, the colors enticing….and man are our tummies grumbling.  When you are having this much fun, it is amazing how quickly hunger sneaks up on you!  A quick look around our food supplies and lunch is on it’s way!

IMG_3105Salad?  Oh yes, baby!  Now, for the vinaigrette….

IMG_3106Chop one small clove of garlic, a pinch of salt, a tablespoon of dijon mustard and add in your one to one ratio of balsamic and olive oil (aka, for this salad a 1/4 cup of each).  Now shake….

IMG_3103The vinaigrette emulsifies immediately, thanks to the dijon…and the taste is a divine combo for the crisp apples and heady gorgonzola.

IMG_3107Of course, we had to serve it alongside our chili rubbed chicken….seriously, YUM.

BTW, this is Sean’s favorite salad….and now, Sam is diggin’ on it, too:)

Give it a try for dinner tonight!

Dijon Vinaigrette

  • 1 clove of garlic, minced
  • 1 tbls dijon mustard
  • 1/4 cup of balsamic vinegar
  • 1/4 cup olive oil
  • pinch of salt (aka salt to taste)

Combine all the ingredients and give it a quick shake.  Toss with your favorite salad.
