Vegan Gluten-Free Pad Thai

The summer months are here, and I am not even close to bathing suit ready! Oh, how I love the warm days and summer nights, but where have gone my excuses for eating warm comfort food and indulgences? Guhhhhh, I am definitely paying the price for my love of cheese and fried foods, y’all. Maybe you have noticed that with each decade, it takes a little more effort to shed that winter layer of pudge. At 40, I have to attack with some seriousness lol! I don’t think I will ever be ready to sacrifice all my fav holiday and winter eats, so when all the colorful foods of summer begin to ripen, I take full advantage of eating my colors and getting healthy! Yep, lots of veggies and fruits! This little recipe is an especially “nummy” way for me to pack in some nutrient dense food, but still let me feel like I am eating a bit of comfort on a plate. Besides, food should be fun, and spiralized veggies are just that: FUN!

Talk about eating your colors!

Vegan Gluten Free Pad Thai
1 yellow summer squash
1 zucchini
1 daikon radish
5 scallions, sliced into slivers
2 carrots, shredded
1 cup of sliced sugar snap peas
1 bunch of cilantro, chopped
Vegan Peanut Sauce
1/3 cup rice vinegar
1/2 cup water
1/4 cup brown sugar
3 1/2 bulbs scallions
2 tab ginger
1 tab garlic
1/2 teaspoon Red pepper flakes
8 ounces peanut butter
1/4 cup soy sauce
1/2 tablespoon sesame oil

After you have attacked all the veggies with your spiralizer, go ahead and give your scallions and sugar snap peas a slender slice. They look so pretty!

Time to make the peanut sauce. WARNING: This stuff is beyond addicting! GOOD NEWS: It is packed with protein for lean muscles. Hallelujah!!

I love this sauce because it is crazy delicious and my food processor does all the work. Simply dump the ingredients into the machine, give it a whirl and then pour on the lusciousness!

Get ready to love summer and summer-eats! I love that this pad thai is both vegan and gluten free. Vegan, gluten free, and just darn fun!

Ingredients
Vegan Gluten Free Pad Thai
  • 1 yellow summer squash

Instructions
  1. Attack all the veggies with a spiralizer! Then go ahead and give your scallions and sugar snap peas a slender slice.

  2. Time to make the peanut sauce. Simply dump the ingredients into your food processor, give it a whirl and then pour on the lusciousness!

  3. Combine all your spiralized veggies and top it with the vegan peanut sauce. Party in your mouth!
