Vegan Banana Ice Cream

I don’t about you, but this Indian summer heat is killing me. It’s been hot and humid out here on the Central Coast (a climate we spoiled “coasters” are far from used to) so I’m doing everything I can to beat the heat. What better way to cool off than a tasty treat that not only satisfies your sugar tooth but also your health. That’s right, we’re making dairy free, vegan, gluten free ice cream! Yes, you read that right. This banana based ice cream is about as good as it gets, so grab a spoon and start diggin on this recipe.

Ingredients:

– 3 bananas

– 1/2 cup Almond milk (or any sort of milk substitute)

– 2 teaspoons cinnamon

– 1/2 cup fresh fruit

– 2 teaspoons sugar (optional. yeah, that’s if you’re feeling extraordinarily healthy, but who are we kidding?)

We will start with the bananas. Simply cut the naners into thin slices and spread them out on a large plate, cookie sheet, or in a gallon Ziplock bag.

Now place them in the freezer and wait for them to freeze. This is the most difficult part of the recipe because once you’ve tasted the glory of banana ice cream, it is impossibly hard to wait for your banana slices to freeze! It should only take an hour or so, unless if you have a dinosaur fridge like I do.

Is it time already?! Take the bananas out of the freezer and whip out your blender. Add your ingredients to the blender; the bananas, almond milk, cinnamon, and sugar, plus a few extra if you’re feeling like an extra special treat… Here are a few suggestions in case you need a little inspiration:

I made mine simple with just some vanila, cinnamon sugar and almond milk, but you can really get creative and make this recipe fun. However, I would warn against adding fresh fruit into the mixture. Most fruit has a lot of water and may water down your ice cream! If you want to try it, maybe freeze the other fruits as well so the consistancy is maintained.

 

Now blend it up!

Finally, it’s time for us to add the best part… the toppings!  I chose fresh nectarine chunks, blueberries, and chia seeds. Homemade granola or other fruits would be delicious as well. YUM!!
