Hey, hey, hey! Sam and I figured that since the last several Trendy Tuesdays circled around fashion and home, it was time to check out some trends for the taste buds. I love this quick little visual on food trends for 2014…they are so spot on! Especially if you consider the cuisine of the emerging food truck takeover! If you visit the site, you will see some more trends like kale and hot sauce. So spot on, and making me hungry!
So, for lunch today, I decided to hit the egg and Siracha trend…and hit it HARD!
Eggy Slaw Bacon & Bleu Cheese Pita
- 2 pitas
- 2 eggs
- 4 slices of bacon
- 1 avocado (or two if you have teeny-weeny ones like mine), sliced
- 1/4 cabbage, shredded/sliced thin
- 2 tbls mayo
- 1 tbls Dijon mustard
- a couple of oz. of Bleu cheese
- Siracha, to tase (optional)
This is crazy easy and quick. I simply combined the mayo with the Dijon to make a nice tangy slaw….oh, and lot’s of black pepper 🙂
Go ahead and throw your pita in the toaster (btw I love pita bread that lists milk in the ingredients…it makes for the tenderest, most delightful pita. You may want to hunt for some of these, it is totally worth it. After all, if you are going to eat bread, it had better be worth it! No cardboard please.)
Simply fry up your bacon and cook your eggs to a lovely Sunny-side-up. The molten egg yolk will add so much to the richness of this simple sandwich.
Here is a little trick. Just before serving, dump your crumbled bleu cheese straight into the skillet. Once it is delightfully bubbly, pour it over your sandwiches. Then give her a dollop of Siracha for an extra little kick. Yum.

Do yourself a favor and get going on making this beauty. It is a tad decadent, but at least the calories are completely worth it!
