Squash Ribbon Salad

Kelly here! You may remember me from my other post and wedding a few months back. Well this happily married lady is doing her best to nest and cook for her new hubby. I’m so excited to show you this easy squash ribbon salad recipe! I’ve been gardening and decided to use my huge squash for a fun little meal!

Time to grab your ingredients….

Start by making ribbons with your squash and then cutting them into matchsticks….

First rinse off the squash and add a pinch of salt, then towel dry with a paper towel

Next chop up your garlic cloves and sauté them with almonds in olive oil until lightly toasted

Next add your squash and cook for about 5 minutes

Lastly toss with 1/4 cup shaved parmesan and 1/4 tsp red pepper flakes and enjoy!

Squash Ribbon Salad

Ingredients
  • 1 huge squash or zucchini (or 2-3 average sized squash)
  • salt and pepper to taste
  • 1/2 cup almonds, slivered
  • olive oil
  • 2 cloves garlic
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup grated parmesan cheesee
Instructions
  1. Start by making ribbons with your squash and then cutting them into matchsticks....

  3. Next chop up your garlic cloves and sauté them with almonds in olive oil until lightly toasted.

  4. Next add your squash and cook for about 5 minutes.

  5. Lastly toss with 1/4 cup shaved parmesan and 1/4 tsp red pepper flakes and enjoy!
