Seasonal Sunday: Heirloom Tomato Salad with Pistachio Vinaigrette

Oh how I love summer!! One of my favorite foods are tomatoes- gotta love a nice big red juicy gem. This seasonal sunday we are exploring a recipe that calls for some lovely tomatoes so run out to your garden and start harvesting!! I was so excited when I saw my little guys starting to blush in the sun this week, nom nom nom. We also are going to make a gorgeous and tasty pistachio vinaigrette to top on those rubies you picked!!

Ingredients for Salad:

  • Heirloom tomatoes
  • Assorted cherry tomatoes
  • Burrata or Fresh Mozzarella Cheese
  • Salt n’ Pepper
  • Fresh Basil

Ingredients for Dressing:

  • 1/3 cup fresh lemon juice
  • 1/4 purple onion
  • 2 tablespoons fresh thyme
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup olive oil
  • 1/4 cup pistachios

Directions:

Place all items in food processor for a creamy thicker dressing. If you prefer a more runny dressing simply give all herbs/pistachios/onion a good chop and whisk all ingredients together. Once you have chopped your basil, tomatoes and cheese simply add about two tablespoons of dressing and mix thoroughly.
