Today chanda and I were down in LA and we couldn’t help but stop at one of her favorites- Hugo’s! They are known for their unique twist on classic meals- that mean’s adding some great spinach to lemonade in this case 🙂 I ordered their Green Tea Lemonade, mmMMMM.
And then chanda and I split this yummy Very Green Casserole filled with broccolini, spinach, asparagus, zucchini, with garlic and fresh herbs in a tomato-basil pesto sauce. Topped with a veggie patty and melted goat and mozzarella cheeses!!
But let’s face it, it’s savoring saturday and I can’t just tease you with yummy food pics! Here is my stab at the classic spinach lemonade- sounds crazy- I know! But it’s surprisingly very sweet and let’s face it, an easy way to get your greens in. This would make for a yummy Super Bowl drink tomorrow or even a fun beverage for the classic green St. Patty’s day party! (You could even spike it!) 🙂
Ingredients: (Made about 4 cups)
- 1 cup lemon juice
- 1/3 cup sugar
- 2 cups water
- 2 cups spinach
Directions: Place all items in blender! Add more/less sugar and water depending on your preference. Serve chilled 🙂
