Savouring Saturday: Kale and Berry Smoothie Bowl

Hello luxurious Saturday morning with nowhere to be and nothing pressing to do!!

I am loving a slower pace today and enjoying some family time!  When my little Pickles (Evangeline) woke me up this morning at 7AM, I found myself totally hankering for something special to start my morning.  I was craving my favorite healthy splurge, the Acai Bowl from Sally Loos, a local treasure here.

But, being that I didn’t want to jump out of my robe as early as 7am, I decided to check the freezer, fridge and cupboards for something to make my food/loungin’ around dream come true.

I started with a simple granola recipe.  Nothing super unusual about this one, just easy and super yummy. Just pull together some nonstick cooking spray, 2 cups old-fashioned oats (orgluten free oats), 1/2 cup dried cranberries, 1 cup sliced almonds, 1 tsp ground cinnamon, 1/4 tsp salt, 4 tbls unsalted butter, 1/4 cup lightly packed brown sugar, 1/4 cup honey, 1 tsp pure vanilla extract, and 1 cup unsweetened shredded coconut

Melting the butter with the sugar and honey, pour it over your granola mixture and bake at 400* for 20-25 minutes.  While your granola is crisping up, grab out some ingredients for a smoothie.  I’m sure that most of you have your favorite ingredients for a smoothie.  This one is just an awesome way to get some raw kale super power into my diet (and into my kids).

20140111_080417With some fresh apple cider, almond milk, raw kale, frozen berries and some flax seed, my smoothie turned out so tasty!

20140111_081344I waited until my granola was cool enough to top my thick smoothie.  Oh boy, I was in a foodie paradise!  It totally satisfied my cravings.

Gorgeous, right?  My kids totally demolished it!  It won a two thumbs up from Evangeline 🙂 over Saturday morning cartoons.
