Savouring Saturday: Bruschetta & Lentils

This week I planted tomatoes- yum!! SO excited to watch these little guys grow and get to cooking. In the mean time, I will just have to buy my tomatoes and make delicious recipes like this one  :) I was inspired by my sis in law Jenny on this recipe- she is always showing me yummy fresh new ideas. This recipe is great for vegetarians and gluten free peeps-holler! It’s great to serve as a dip with crackers or chips or even throw some meat in it and make a little protein bowl for lunch.

Ingredients:

  • 2 cups cooked lentils
  • 1/2 cup feta
  • 2 cloves garlic
  • 5 tomatoes
  • handful chopped basil
  • pinch of  salt

Directions:

Either buy cooked lentils (Trader Joes) or cook 2  cups lentils. Let chill in fridge. Next chop up your tomatoes, garlic, and basil and mix in with chilled lentils. Add feta cheese and pinch of salt and stir together. Serve as an appetizer with chips or crackers!
