Savouring Saturday: Antipasta Salad

Chanda and I were craving something light, fresh and chilled to make another attempt to beat the heat today!! What I love about this antipasta salad is that it’s so colorful and also gluten free for some of you peeps!!It’s super easy to make and whip out for guests and get the “hostess award” so be sure to file this one away!!

Ingredients:
Marinated Mozzarella balls
Marinated Artichoke Hearts
Cherry Tomatoes
Cucumbers
Coppa
Purple Onion

Slice up your coppa…

Now time to half your cherry tomatoes…

And chop up those cucumbers….

OLYMPUS DIGITAL CAMERA And lastly the purple onion into bite sized pieces…

Toss EVERYTHING together in a bowl….

Add a splash of the marinated juices form the artichoke hearts and the mozzarella
