I am a big fan of anything fast and healthy! Life with three kids (one will be a teenager in July, GULP) can get pretty busy. I tell Sam all the time that motherhood is a multi-tasking, juggling act that keeps life from being anything but boring. Add running Zest with Sam, and you get why healthy and fast is almost a prerequisite for my daily noshing. Oh, and should I mention that time for getting sick would be a total luxury?! Haha, I seriously need healthy snacks!
So, I have developed various quick snacks that whirl up fast in a food processor. Veggie heavy and quick as lightening, one of my favorites is Baba Ganoush! Ever wonder what to do with that shiny and plump eggplant? Give this a whirl!
The most time consuming part of this recipe is slicing up some eggplant, coating them in olive oil, and giving them a sprinkle of salt and pepper. Just throw them into the oven at 350*F for about 15 minutes while you grab the other ingredients…and maybe juggle some other activity outside of the kitchen (laundry, answering emails, developing a website, cleaning house, gardening, help with homework……you get the idea).
The other ingredients are simple: tahini, garlic, lemon juice, parsley, cumin, and salt. 15 minutes left unattended in the oven, and my eggplant looks gorgeous!
Now it’s just a matter of plunking everything into the processor!
One roasted eggplant + zest and juice of 2 lemons…..
1 tablespoon of tahini + 1 minced garlic clove……
And finally, a 1/2 tsp cumin + 1 tablespoon of chopped parsley….
Add a 1/4 teaspoon of salt and a good dose of black pepper….whirl away!
Creamy and delish! For a little extra protein, I decided to nosh away on this yummy dip with some lentil chips…so good!
Now, time to eat ….. while multi-tasking on the computer! I did go an extra mile to make it pretty….figured that while the food nourished my body, the adorable presentation would nourish my spirit (it’s the little things that make the day feel special and less rushed).
Mmmmm, so good!
