Roasted Chickpea Trail Mix

Here we are in the New Year and I don’t know about you but I have got the snackies! Always on the hunt for something to nibble and lets face it, it’s very hard to find healthy options most of the time. Trail mix is one of those classic snacks that always seems to hit the spot, from the bold flavor and colors to the convenience factor- you can’t go wrong! Today we are steering away from your classic M & M and raisin mix to a more gourmet and filling option! Have you ever cooked with chickpeas, also known as garbanzo beans? These magical beans are a great source of protein, vitamins and minerals that are widely eaten all around the world. Infact chickpeas have SO many great health benefits as well from lowering blood pressure to making you feel full and curbing food cravings since they are both high in protein and fiber as well as helping control food sugar levels.

Once you have rinsed off your chickpeas let them dry a bit with a paper towel so we can ensure they get nice and crispy! Next place chickpeas and almonds on a foil lined cookie sheet. Then add 1 tbsp olive oil and a pinch of salt n pepper. Toss and place in 400 degree F oven. Roast for about 30 minutes or until chickpeas are crisp and golden brown. You may need to toss halfway through.

After roasting add maple syrup, cayenne, lemon zest, shaved coconut, and remaining olive oil and salt. Roast for 5 more minutes.

Ingredients
  • 1 15 oz can chickpeas
  • 1 cup unsalted almonds
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 lemon zested
  • 1 tbsp maple syrup
  • 1/4 tsp cayenne pepper
  • 1/2 cup toasted shaved coconut
