Roasted Carrots with Brown Butter and Crispy Sage

Thanksgiving is definitely my favorite holiday. Not only do I love the colors this time of year but this holiday is a combo of two of my favorite things- food and family!! I have a huge Italian family so when we gather around the table there is usually about 50 to 60 of us giving thanks. Our spread usually involves all the classic holiday dishes, but this year I am thinking I may have to mix it up, especially after creating this delicious fall recipe! I am a sucker for all things brown butter, so when I dreamed up these carrots and they were just as tasty as they were in my head- I was STOKED! Plus these carrots require practically no prep so they are a great easy side dish to have up your sleeve and “wow” your guests. Also can we talk about the color? After coming out of the oven these golden orange beauties couldn’t represent a better dreamy fall color palette. Okay enough talking, let’s get to cooking!

Pre-heat oven to 425 degrees F. Drizzle olive oil over carrots on a baking sheet.

Sprinkle seasoning and garlic, then toss carrots until completely coated.

Bake in oven uncovered for 30-35 minutes or until carrots are browned and softened.

While carrots bake, prepare brown butter. Place butter over medium heat and drop sage leaves into butter. Let simmer until butter is completely browned, this will smelly nutty- yumm! You don’t want black, just brown.

Crispy sage and browned butter? Check!

Pour browned butter and sage over roasted carrots and serve warm.

Ingredients
  • 1 bag Baby carrots
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 clove minced garlic
  • olive oil
  • salt & pepper
  • 1 bunch fresh sage leaves
  • 3 tbs butter
