Quick Smoked Mozzarella and Tapenade Stromboli

It’s time to start thinking about next weekend, peeps!  Time to think about quick groceries to have on hand for creating some snackable Super Bowl Sunday eats.

You know what I’m talkin’ about.  Fast things to throw together and eat with your hands while you root for your favorite team.  Are you a Bronco’s fan or a Panther’s fan y’all??  Regardless, with a quick trip to Trader Joe’s, you will be ready to keep all fans on your couch super happy!rolled pizza_0000Smoked Mozzarella & Tapenade Stromboli

1 package of pizza dough

1/2 a wedge of feta

1/2 container of tapenade

3 cloves of garlic, sliced

1 tomato, sliced thin

1/2-1 cup fresh spinach

1 bunch of fresh basil

1/2 cup shredded mozzarella cheese

1 egg, for egg wash
rolled pizza_0001Use a little bit of flour to keep your dough from sticking as you roll it out into a rectangle.rolled pizza_0002Using about a 1/4 cup of tapenade or 1/2 a tub of Trader Joe’s tapenade, spread it over half the dough.rolled pizza_0003rolled pizza_0004Now, slice the fresh garlic and scatter it over the tapenade.rolled pizza_0005Thinly slice a tomato and layer it on, as well.  I like a roma tomato for this purpose because it’s not too juicy.rolled pizza_0006rolled pizza_0007Crumble on the feta cheese.rolled pizza_0008Next, layer on the fresh spinach.  Go as heavy with the spinach as you want…just know that the water content is high, so too much and things will get a bit drippy.rolled pizza_0009Now for some more flavor!  Give a rough chop to some fresh basil and sprinkle it on top of the spinach.rolled pizza_0010rolled pizza_0011Last ingredient is the special flavor nuance.  Have you ever tried smoked mozzarella?  It is so awesome!  A mild milky flavor with the perfect hint of smoke.  Sooooo nummy!  I layer some of this inside the stromboli and save the rest for the crust.rolled pizza_0012rolled pizza_0013Time to roll.  As you may have noticed in the pictures, I kept the ingredients closer to one side of my dough rectangle.  Take that edge and begin rolling it up, tucking the ingredients in as you go.rolled pizza_0014rolled pizza_0015Once it’s all rolled up, place it seam side down on your cookie sheet and tuck your ends under.rolled pizza_0016Scramble up an egg and give the stromboli a nice coating.  This egg wash will give the dough a perfectly browned and shiny crust.
rolled pizza_0017Last step, top this bad boy with the remaining smoked mozzarella and throw it into a nice hot oven set to 425*F.
rolled pizza_0018This stromboli will only take about 15 minutes to cook.  My oven was a little uneven in temp, so I rotated the cookie sheet about 10 minutes into cooking (I didn’t want one side of the stromboli to be blond and doughy while the other side overcooked).rolled pizza_0019Perfection!rolled pizza_0020Slice it up and get ready to dig in!  This is perfect game food…fast, delicious, and total finger food!rolled pizza_0021I am sure there will be loads of wings and nachos on the coffee table next Sunday, but maybe this little gem will bring some veg into the foray.  One word of wisdom, pop into Trader Joe’s for your groceries before Friday….or get ready to deal with the crowds as we all buy our last minute snacks!
