Lox & Chèvre Bagel

This is almost too simple to call a “recipe,” but I love it so much that I just had to share. I have been cutting way back on dairy products for personal health benefits, but this cheese-aholic was seriously missing a good bagel loaded with cream cheese and lox. I have always LOVED lox and schmear as a perfect breakfast or simple lunch. There is nothing like it, in my book. So, what was a girl to do, if she was avoiding dairy? Well, since goat milk products are wayyyyyy easier to digest, I decided that a safe “cheat” was to replace my quintessential cream cheese with some tangy and creamy chèvre. The result may have usurped cream cheese in my book!

Not only did I not miss my cream cheese, but this whole new flavor component turned my old favorite (lox) into something new and even more crave-able! You guys have got to get on this bandwagon, fast! Get ready to impress anyone wanting to brunch at your house with effortless ease. This one is a keeper.

Ingredients
  • 4 bagels sliced & toasted
  • 10 oz chèvre (soft goat cheese)
  • 1/2 red onion sliced thin
  • 1/4 cup capers
  • 2 tomatoes sliced
  • 1 package Lox or smoked salmon
  • cracked pepper to taste
  • 1/2 cucumber sliced (optional)
Instructions
  1. Toast the bagel halves while you slice your red onion.

  2. Spread the chèvre over the toasted bagels and then top with lox, red onion, capers, and whatever you like on your bagel.
