Meet my Grandma Rose…
Doesn’t she work that coat?? Now a few thing you might not know about me…I am actually named after my Grandpa (Samuel) and Grandma (Rose)- hence Samantha Rose. Grandma Rose was an amazing woman. She had six brothers and was a feisty but oh so caring and strong woman. Coming from her era, she was a true Rosie the Riveter who always fought for her family, worked her smile at a few beauty pageants but also knew how to really cook and zest. Another fun fact- I am half Italian. So put it all together and what do you have? Samantha Rose-A crazy Italian girl who loves her familia, talks with her hands and more importantly know how to eat!! It has always been a family tradition to make Grandma Rosie’s pizzelle cookies during the Holiday season. PIzzzzzzZZZZ- whaaaat? Yep- pizzelles! These yummy Italian wafer cookies are delicious and conveniently resemble a snowflake for the fun holiday season. Ready to give it a try?
Ingredients: (makes 36 pizelles)
Pizzelle Maker (there are different sizes, make sure you snag one that allows you to lock the clamps together while cooking)
1 3/4 cups Flour (I have used gluten free flour and it turned out great!)
1/2 cup melted unsalted Butter
3/4 cup Sugar
2 teaspoon Baking Powder
1 tablespoon Anise extract or vanilla extract (optional)
Step 1- preheat your pizzelle maker while preparing the batter
step 2 – place flour and baking powder in a small bowl and stir to combine and set aside
step 3- place eggs and sugar in bowl and mix well, next add melted butter and vanilla/anise
step 4- add the flour mixture and mix well, but don’t over mix
step 5- spray coconut oil, vegetable oil or butter onto grids to avoid sticking
step 6- using a small ice cream or cookie scoop place scoop on center of grid and close down to cook
step 7- cook until red light flashes, remove cookie and let cool
I used my mini ice cream scoop and it was the perfect amount for my mini pizzelle maker- gotta love it!
