Gluten Free Coconut Pancakes with Peaches & Almonds

Alright, I confess, it is a tad early for peach season here in California…but I could not resist reposting this recipe now that the days are longer and the sun is shining bright!  This is a CRAZY easy recipe, and it is beyond delish.  Could be the perfect, lazy Sunday brunch, if you were so inclined.  Read on, to get this little recipe….way back from 2014!  Wow, time flies!!!

Oh dear, this one is dedicated to all my comrades who get a belly ache at the mere sight of baked goods!  Hang in there lovelies, you can still get your massive cravings sated, and look like a domestic goddess in the meantime.  The best part about this delicious decadence is that you literally take a boxed mix and give it some quick panache.  Seriously, this is fast and easy…perfect for a lazy morning OR a busy day…which my kids totally appreciate!

Ingredients

1 cup Bisquick Gluten Free Pancake Mix

1 cup of milk (or coconut milk 🙂 I loooove my coconut!)

2 tbls coconut oil

1 egg

3/4 cup sweetened, shredded coconut

2 peaches, sliced

1/2 cup almonds, chopped

powdered sugar for dusting

serves 4 (or two piggies 🙂 )

OLYMPUS DIGITAL CAMERAAfter you have mixed your ingredients, go ahead and cook your pancakes on a skillet.  You can use butter or canola oil, but I love the flavor of cooking them with coconut oil.  It literally becomes this magical layered flavor of the tropics!

Serve with fresh peaches, chopped almonds and a fairy dusting of powdered sugar.  Then….dig in and sate those cravings!!!
