Happy Sunday folks! I hope you are having some much needed “hang-out” time with your friends and loved ones. Sundays are easily my favorite day of the week because it usually means a slower pace and some time to gather. I know that it can also mean laundry day and grocery shopping for the week…but hopefully you schedule some time to live in the moment. Time to casually pull together some grub and sip on some iced tea while you chat and soak up the warmth from the sun.
Sounds too good to be true? Well, try some basic guac and chips…and maybe a margarita. Instant “chill-ax” time!! 😉 And just in time to get in the mood for Cinco de Mayo!!
1 jalapeno, seeds removed (optional) and minced
2 cloves of garlic, minced
1 bunch of cilantro, chopped
1/2 lemon, juiced
sea salt, to taste
serve with tortilla chips
It is kind of funny to write a recipe this basic, but honestly there are just so many approaches to this popular snack (I say popular because I am a biased California cook). Some people swear by incorporating tomatoes, some sour cream, and some even mayonnaise. I guess I am a purist who wants only fresh flavors of Mexico added to my guac.
Simple and addictive.
Removing the seeds and ribs of the jalapeno will guarantee that you will not offend even the mildest gringo of taste buds. However, I prefer to keep most, if not all of my seeds. Spicy guacamole is AWESOME!
Fresh garlic may come as a surprise to some of you, but it (coupled with sea salt) is the secret to super yummy guacamole in my world.
Simply toss all your fresh ingredients into a bowl and add your avocados for the perfect mash-up!
A fresh squeeze of lemon or lime and a good pinch of salt bring all the flavors alive!
(Taste as you go, so that you do not skimp too much on the salt…it really makes a difference).
Ready to grub on in just minutes! Now, that is my kind of recipe!!
