Deviled Eggs with Zest and the PERFECT boiled egg

I know that a ton of people have switched over to plastic eggs filled with candy for their Easter egg hunts.  I totally get it, they are simple, the kids are more than jazzed to have another shot at a Halloween-type gorging on sugar, and if they get lost there won’t be any stink bombs in the yard a month later.  I totally get it….but I’ve gotta say there is nothing like rocking it old school style!  My happiest memories of Easter are egg dying with my sister, creativity mixed with the nostril-sting of vinegar.  And actually, when I think about it, I even love my memories of mom and dad’s anxious egg counting at the beginning of the hunt and at the end…making sure that no egg was left.  Even my mom’s chiding my father about hiding them too well, making it almost impossible to remember where to find them when my sister and I failed to find them all.  I love it!  FAMILY!

We had a blast with dying this year, so many colors!

Here is another really awesome perk of doing a REAL egg hunt….deviled eggs!!

DSC_1702Halve your hard boiled eggs and put the yolks in a separate bowl.

DSC_1704Add in one spoonful of Dijon, 3 spoons of mayo, and 2 tsp teaspoons of white wine vinegar per dozen egg yolks.  Salt to taste and smash away!

Deviled Eggs with Zest

  • 12 hard boiled eggs (place eggs straight from the fridge into a cold pot of water, bring to a boil, once boiling set a timer for 4 minutes, after 4 minutes drain the water and run under cold water)
  • 3 tbls mayo
  • 1 tbls Dijon mustard
  • 2 tsp tsp white wine vinegar
  • salt to taste
  • tbls capers, minced for garnish

Cut the eggs in half, lengthwise.  Pop out the yolks into a bowl and mix in the other ingredients with a fork.  Place the mixture into a gallon size ziplock, cut off the tip and pipe into the egg halves….or just spoon in and then gobble them up!
