Creamy Coconut Oil Coffee

This recipe is so easy that it’s stupid! Well, stupid if it weren’t for how freaking great it is for your health, and so dang yummy. You may be creeped out by my suggestion to throw some coconut oil into your coffee, but it makes for one incredibly luscious non-dairy latte to rev up your day.

Why coconut oil, you may ask? Easy! Coconut oil has so many benefits, including memory improvement, increasing your HDL cholesterol (ummm that’s the good stuff that prevents heart disease), fighting cancer, reducing ulcers, alleviating inflammation, and a million other benefits! Convinced yet? ? ?  Well, even if you still find yourself on the fence, trust me on taste! This concoction whips up fast and the flavor makes you want to sink down on the couch for a slower morning.

Just add a tablespoon of coconut oil to your fav cup o’ joe.

The most important step is emulsification. I know, it sounds fancy. It’s pretty simple, some fast agitation whips it into a creamy drink. On the technical side, you are literally playing the roll of chemist! The agitation changes the molecular structure of the coconut oil and those little suckers bond with the coffee. The result of that fast agitation is a rich, frothy hot beverage that feels like you are indulging in cream!

If you don’t have a fancy emulsion stick, you can use a whisk or a simple smoothie shaker. Heck, you can use a blender, too. Simple and fast is the key (especially if you are anything like me and believe in 2-3 cups of coffee in the AM).

  • 1 cup coffee
  • 1 tbsp coconut oil
Instructions
  1. Add the coconut oil to your hot coffee and use an emulsion stick to blend your coffee, or use a blender.  Watch coffee turn into a non dairy latte before your eyes!  Enjoy!
