Cranberry Orange Swiss Cheese Pancakes

I know I know- first you are probably thinking- what kind of a crazy combo is that? Orange cranberry swiss? And then if you are on the other hand you are like, mmmmm- oh wait I am supposed to eat better this New Year?! Whelp- I say be adventurous and have a happy belly. This combo is sure to make your tastebuds smile and definitely zest up your ordinary pancakes.

Pancake Mix: (12-14 servings)

  • 4 cups all-purpose flour
  • 2 cups whole wheat flour
  • 2/3 cup sugar
  • 2 tablespoons baking powder
  • 1 tablespoon baking soda
  • 1 egg
  • 3/4 cup milk
  • 1 tablespoon orange zest
  • 1/2 cup chopped cranberries
  • 7 to 8 slices swiss cheese

Directions:

Mix all ingredients except for orange, cranberry and cheese in a bowl to create batter. Turn on hot griddle and spray, make pancakes as you normally would but sprinkle in cranberry, orange zest, and a few slices of cheese on pancake while cooking. Next spoon on a bit more batter to enclose the ingredients so in center of pancake. Flip and cook until golden brown. Serve warm and with maple syrup. MMMMmmmmmMMMM
